Ingredients
- 2 lbs (900g) beef chuck roast or beef stew meat, cut into 1-inch cubes
- 2 tbsp olive oil
- 1 large onion, chopped
- 3 garlic cloves, minced
- 3 carrots, peeled and cut into chunks
- 3 potatoes, peeled and cut into chunks
- 1 red bell pepper, chopped
- 1 cup (240ml) beef broth
- 1 cup (240ml) red wine (optional; you can substitute with additional beef broth)
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper, to taste
- 1 cup (120g) frozen peas (optional)
- 2 tbsp fresh parsley, chopped (optional, for garnish)

Preheat the Oven: Preheat your oven to 325°F (165°C).

Sear the Beef: Heat the olive oil in a large oven-safe pot or Dutch oven over medium-high heat. Add the beef cubes in batches, searing them until browned on all sides. Remove the beef and set aside.

Sauté Aromatics: In the same pot, add the chopped onion and cook for about 3-4 minutes until softened. Add the minced garlic and cook for another 30 seconds.

Add Tomato Paste: Stir in the tomato paste and cook for about 1 minute to caramelize it slightly.

Deglaze and Combine: Pour in the red wine (if using) and beef broth, scraping up any browned bits from the bottom of the pot. Stir in the Worcestershire sauce, thyme, rosemary, salt, and pepper.

Add Vegetables: Return the seared beef to the pot and add the carrots, potatoes, and red bell pepper. Stir to combine everything.

Bake: Cover the pot with a lid and transfer it to the preheated oven. Bake for about 2-2.5 hours, or until the beef is tender and the vegetables are cooked through.
